October's Recipes of the Month
All the wonderful varieties of apples are ripe and plentiful in the stores right now. Here are some new recipes to try using that favorite fruit and another quick one too...
Apple Pecan Pie
1 ½ C, flour
¼ t. salt
¼ C. sugar
1 T. melted butter
1/8 t. salt
1/3 C. corn syrup
½ C. cold butter, cut in chunks
1 C pecans
1/3 C. toffee bits
½ t. vanilla
2 eggs
1 can apple pie filling
1/3 C. sugar
8 oz. Cool Whip
Whole pecans to decorate
Crust: In food processor, combine flour, sugar, salt, butter and egg. Pulse until butter is chopped to pea size. Empty into a bowl and add toffee bits. Press into 9” pie pan.
Filling: Combine eggs, sugar, salt, butter and corn syrup. Beat with electric mixer until light and fluffy. Stir in pecans and pour into crust. Bake at 350 for 30 minutes. Remove from oven and spread apple pie filling carefully over the top. Return to oven for 10 minutes. Cool. Serve with Cool Whip and whole pecans
Butterscotch Apple Pie
Double pastry crust for a 9” pie
¾ C butterscotch flavored topping
2 cans Apple pie filling
½ C pecan halves
Place one pie crust in greased pie plate. Pour 2 can pie filling evenly into crust. Drizzle
¼ C butterscotch topping over filling and place second crust over filling. Seal edges. Cut several slits in top crust to vent. Bake at 425 for 40-45 minutes until golden brown. Let stand 15 minutes. Arrange pecan halves on top and drizzle remaining ½ C butterscotch topping over pie letting it dribble down the sides. Serve warm.
Pockets of Lemon Cake
1 pkg White Cake Mix
4 egg whites
1 ¼ C. water
1 can lemon pie filling
1/3 C oil
Grease and flour a 9 X 13 pan. Prepare cake as directed on package using oil, water, and egg whites. Spread batter in pan. Drop lemon pudding by heaping teaspoonfuls evenly over cake batter. Bake at 350 for 30-40 minutes or until edges pull away from pan and top is golden brown. Allow cake to cool in pan 45 minutes at least.
Topping: Mix together 1 can Lemon Frosting and 8 oz. Cool Whip. Spread over cake and chill. Store in refrigerator.
