October Its apple time and what could be better than the smell of apples cooking with the spicy addition of cinnamon, brown sugar, or other spices? Here are two apple recipes I gleaned from a recipe website while online.Cracker Barrel Fried Apples 2 cups Apple juice 4 large Golden Delicious apples with -- peel, 1/2" wedges 1/2 cup Apple juice 3 tablespoons Cornstarch 1 teaspoon Apple pie spice 4 tablespoons Sugar Combine apple juice and apples in a medium skillet. Simmer gently and turn apples often with spatula until fork tender but not mushy. Remove with a slotted spoon to oven dish. In blender put 1/2 c apple juice, cornstarch, spice and sugar. Blend a few seconds until smooth. Stir into hot juice in skillet and cook, stirring constantly on med-high until it bubbles and becomes thickened and smooth. Turn heat off. Pour over apples.Serve warm as side dish or dessert.
Butterscotch Apple Pecan Cobbler 12 ounces Nestle Toll House -- Butterscotch flavored chips (2 cups)1/4 cup Brown Sugar -- firmly packed1/4 cup All-purpose flour1/2 teaspoon Cinnamon2 1/2 pounds Tart Apples -- peeled & dicedTOPPING-----1/2 cup All-purpose Flour1/4 cup Brown sugar -- firmly packed4 tablespoons Butter (1/2 stick)1 cup Pecans -- chopped 3/4 cup Quick or Old Fashioned Oats -- uncooked Preheat oven to 375ψF. In small bowl, combine Butterscotch Morsels, brown sugar, flour and cinnamon; set aside. Place apples in 13 x 9" baking pan; sprinkle morsel mixture over apples. Bake 20 minutes. TOPPING: Combine flour and brown sugar, cut in butter until crumbly. Stir in pecans and oats; sprinkle over apple mixture. Bake 30-40 minutes until apples are tender.Cool slightly. Serve with ice cream or whipped cream.
