June's Recipes of the Month
June's ROMs (Recipes of the Month) all come to us from Carol Hoffmeister and a Friday Bunch meeting...enjoy!
Carol's BBQ
1 pound ground beef browned with 1 med. onion. Add 2 T. flour just before removing from heat.
Add 1 C. water, 1 bottle (14 oz) catsup, 1 T brown sugar, 2 T chili powder, 1 can corned beef. Keeps well in crock pot.
Carol's Cauliflower Salad
1 head lettuce, chopped
1 head cauliflower, cut into fleurettes
2 C mayo
1 med. onion
1 lb. bacon, cooked brown and broken up
1/3 C Parmesan Cheese
1/2 C sugar
Place in a bowl in the order given. Cover and refrigerate overnight. Toss just before serving.
Carol's Pineapple Cake
1 box yellow cake mix (prepare as directed)
Pour into a 9 X 13 pan and bake. Cool somewhat. Poke holes in the cake top.
Bring to a boil 1 can crushed pineapple (undrained) and 1 C. sugar. Pour over slightly cooled cake.
Topping: Mix 1 large box instant vanilla pudding mix with 2 (not 3) C. milk. Let set a bit and pour over the pineapple topped cake. Let cool and set. Then top with Cool Whip.
