February's Recipes of the Month
February will be designated as Pie Month for us…love pie. I missed sampling these three delights (darn cold) but I heard from all the OddOnes that they were wonderful. So….from the kitchen of Joyce, who is a great cook.......let’s have pie!
DREAMSICLE DELIGHT PIE
8 oz. fat-free cream cheese
1 sm can mandarin orange slices, drained
dash of vanilla extract
1 sm can pineapple tidbits, drained
1 lg. frozen light topping (12 oz)
1 low-fat graham cracker crust
1 sm. box sugar-free orange jello
Cream topping w/cream cheese. Blend until smooth. Add vanilla.
sprinkle jello over mixture and blend. fold in pineapple and oranges. Put into pie shell.
Refrigerate. Top with remaining topping. Other flavors of jello (raspberry) may be used.
RITZ CRACKER PIE
2 c. water
2 tsp. cream of tartar
1 1/2 c. sugar
25 Ritz Crackers
Bring water, sugar and cream of tartar to a boil. Add crackers. Put filling into pie crust. Sprinkle with cinnamon and dot with butter. Place top crust on filling. Bake at 375 for 35-40 minutes or until crust is browned.
CHOCOLATE CHIP PIE
3 eggs
1/4 c. vegetable oil
3/4 c. brown sugar
1 tsp. vanilla
3/4 c. sugar
1 1/2 c. semisweet chocolate chips
3/4 c. flour
1 c. chopped pecans or walnuts
1/2 c butter, melted and cooled
1 unbaked pastry shell (9")
Beat eggs until foamy. Beat in sugars, flour, butter, oil and vanilla until well blended.
Stir in chocolate chips and nuts. Pour into pie shell. Bake at 325 for 75 minutes or until
knife inserted near the center comes out clean. Cool in wire rack. Chill until serving. Re-
frigate leftovers. Serves 8.
