Remember the orange-vanilla dreamsicle ice cream bars you loved as a kid? Well, this cake will give your taste buds flashbacks. Orange cake mix, orange jello, and Kool Whip combine to make the perfect Spring dessert……

 

Creamsicle Cake (from Karen Moon)

 

1 box (18.25 oz.) orange cake mix (or yellow or white if you can't find orange)

2 (3 oz) pkg. orange jello (divided)

1 (3 oz) pkg. vanilla instant pudding

1 C. milk

1 t. vanilla extract

1 (8 oz) tub Kool Whip

 

Prepare cake mix as directed on package in a 9 X 13 pan. Cool. With a meat fork, poke holes all across the entire cake. In a small bowl, dissolve 1 box jello in 3/4 C boiling water. Add 3/4 C. cold water. Pour jello evenly over the top of the cake, making sure it gets into all the holes. Refrigerate for several hours. Mix remaining box of jello, pudding, milk and vanilla together. Beat well. Fold in Kool Whip and spread evenly over top of cake. Refrigerate.

Dreamsicle Pudding

1 small box sugar free orange jello

1 box sugar free instant vanilla pudding

1 can Mandarin Oranges, drain

8 oz. Kool Whip

 

Dissolve the orange jello in 1 C. hot water. Add 1 C. cold water. Let stand 5 minutes. Using a hand mixer (or stir well), add the instant pudding. Stir in oranges and Kool Whip. Refrigerate. (1 C. = 100 calories)

Creamsicle Smoothies

 

1 ½ C, Vanilla Ice Cream

1 C. mandarin orange slices

 

½ C heavy cream or milk

 

2 T. frozen orange juice concentrate

 

1 t. vanilla extract

 

Place all ingredients in a blender and blend until smooth. If a thicker texture is desired add more ice cream or frozen concentrate. Pour into 2 chilled glasses and enjoy! Cool idea… freeze in Popsicle trays for a quick kid (or adult) friendly treat
