GINGER APPLE-CRANBERRY SUNDAE

  • 2 tsp butter 3 Fuji apples, cored and diced
  • 1 tsp canola oil
  • 1 c fresh or frozen cranberries
  • 1 tsp fresh minced ginger
  • ½ c apple juice or water
  • 2 tb light brown sugar
  • 3 c nonfat vanilla frozen yogurt
  • 1 tsp ground cinnamon

In medium saucepan, melt butter with canola oil over medium heat. Add ginger and sauté 1 minute, until fragrant. Add brown sugar and cinnamon and cook 1 minute, stirring constantly, until brown sugar melts. Add apples, cranberries and juice and bring to simmer. Simmer 5 minutes, until apples and cranberries soften and liquid reduces slightly. Just before serving, spoon mixture over frozen yogurt. Alternative serving: Spoon over vanilla or tapioca pudding.
