GINGER APPLE-CRANBERRY SUNDAE |

In medium saucepan, melt butter with canola oil over medium heat. Add ginger and sauté 1 minute, until fragrant. Add brown sugar and cinnamon and cook 1 minute, stirring constantly, until brown sugar melts. Add apples, cranberries and juice and bring to simmer. Simmer 5 minutes, until apples and cranberries soften and liquid reduces slightly. Just before serving, spoon mixture over frozen yogurt. Alternative serving: Spoon over vanilla or tapioca pudding. |
