IRISH SODA BREAD

| Combine dry ingredients. Cut in butter or margarine. Beat egg slightly, mix with buttermilk, add to dry ingredients; stir until blended. Turn out on floured board and knead until smooth (2-3 minutes). Divide dough in half; shape each into a round loaf and place in round cake or pie pan. Press dough down until it fills pan. With sharp knife cut X through middle of loaves about _ inch deep. Bake 35-40 minutes at 375 degrees. If desired, add 2 cups raisins or currants to flour mixture before adding other ingredients. Optional: use caraway seed with raisins instead of cardamom or coriander. *I used coriander harvested from mature cilantro last summer. |
