IRISH SODA BREAD
  • 4 c flour
  • 1 tsp salt
  • 1 tsp soda
  • 3 tsp baking powder
  • 1 egg
  • 1/4 c butter or margarine
  • 1/8 tsp cardamon or coriander*
  • 1/4 c sugar
  • 1 3/4 c buttermilk
Combine dry ingredients. Cut in butter or margarine. Beat egg slightly, mix with buttermilk, add to dry ingredients; stir until blended. Turn out on floured board and knead until smooth (2-3 minutes). Divide dough in half; shape each into a round loaf and place in round cake or pie pan. Press dough down until it fills pan. With sharp knife cut X through middle of loaves about _ inch deep. Bake 35-40 minutes at 375 degrees.

If desired, add 2 cups raisins or currants to flour mixture before adding other ingredients.

Optional: use caraway seed with raisins instead of cardamom or coriander.

*I used coriander harvested from mature cilantro last summer.
