Ginger Orange Tea Bread
  • Peels of 2 medium oranges
  • 1/2 c water
  • 1 and 1/2 cups sugar, divided
  • 2 TBSP butter
  • 2 eggs, separated
  • 3 cups sifted all-purpose flour
  • 3 1/2 tsp. baking powder
  • 1/2 tsp salt
  • 1 tsp ginger
  • 1 cup milk
Preheat oven to 350. Cut orange peel into thin silvers. Mix peels with water and 1 cup sugar and boil for 5 minutes. Cover pan and let cool for at least 1/2 hour. In mixing bowl, cream butter with remaining sugar and add egg yolks, beating thoroughly. In a separate bowl, combine flour, baking powder, salt and ginger. Alternately (a little at a time) add milk and dry ingredients to egg mixture. Fold in orange peel mixture. Beat egg whites until they are stiff; carefully fold into batter. Pour batter into well-greased bread pans and bake until toothpick inserted comes out clean, about 1 hour. Makes 1 large or 2 small loaves.
