CHOCOLATE BANANA NUT BREAD
  • 1 tsp baking soda
  • 1/4 cup warm water
  • 12 tb butter, softened
  • 1 1/3 cups sugar
  • 2 large eggs
  • 3 ripe bananas, mashed
  • 2 cups flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1 cup chopped pecans or walnuts
Grease and flour a 9x5 inch loaf pan and set aside. In small bowl, combine baking soda and warm water and set aside. Place butter in large bowl of mixer. Add sugar, and cream until light and fluffy.

Add eggs, one at a time, beating 30 seconds after each addition. Beat in bananas. Beating at low speed, gradually add flour, cocoa powder, baking soda mixture and vanilla. Beat until just blended.

Hand stir in nuts. Bake in preheated 350( oven 1 hour or until toothpick comes out clean. Cool 5 minutes before removing from pan.
