ELDERFLOWER CORDIAL

Bring water to boil. Slice lemon thinly and place in large heat-proof bowl with flowers, sugar, and cream of tartar. Pour the boiling water over all and stir until sugar is dissolved. Leave to cool. Cover and keep cool and shaded for 4 days. Strain through strainer well lined with muslin or cheesecloth and pour into bottles. Store in a quiet, dark place. May be drunk right away with vodka, vermouth and lemonade or kept in the refrigerator. Add it to tonic water over ice, to a gin and tonic, or into gooseberry dishes. A slice of lemon or lime is a nice addition. |
